When used for whipping cream, the sweet taste of nitrous oxide gas does not affect the flavor. The nitrous dissolves into the cream’s fat and expands to create the whipping or foaming of the cream.


IS NITROUS OXIDE SAFE?
Nitrous oxide chargers should not present a hazard if properly stored, opened, and disposed of. The chargers should only be opened with approved devices from our website as to avoid any injury. Only dispose of chargers which have been emptied completely. The whipped cream dispenser should be emptied before removing the top for cleaning. Chargers should never be stored in an environment which exceeds 122º Fahrenheit (50º Celsius). Always store chargers out of reach of children.

The gas was shown to prevent pain and discomfort during minor dental procedures. Today, nitrous oxide is commonplace in the dental and medical community, and is listed on the WHO Model List of Essential Medicines. Additionally, it is used in rocket and vehicle racing engines. The presence of N2O in engines provides more oxygen than air alone and creates a more powerful combustion while being non-flammable. Finally, it is an approved food additive, particularly as an aerosol spray propellant. Common culinary uses of nitrous oxide include whipped cream chargers, cooking sprays, and displacement of oxygen in bags of snack food.


HOW DO I USE N2O CHARGERS?
Nitrous oxide chargers are a simple and easy way to create delicious whipped cream. They are used primarily for culinary purposes, and chefs often use them to create foams not limited to whipped cream. When the cream is dispensed from a whipped cream canister, the nitrous oxide gas binds with the various stabilizing agents in the cream, including fats, gelatins, and other trace components. When the cream encounters oxygen, a foam is created. A similar process occurs when hand whipping cream, as nitrogen gas binds to the fats while whisking. Nitrous oxide chargers make the whipping process faster, easier, and more consistent. The dispenser must be shaken after screwing on a new nitrous oxide charger to create optimal whipped cream. It is also important to not overfill the dispenser to leave room for the gas. Do not use CO2 soda chargers to create whipped cream, as the liquid will carbonate and not foam.

For prolonged use, such as in dental procedures, it is mixed with oxygen (N2O-O2) to prevent harmful effects to the brain.

WHAT IS THE DIFFERENCE IN USING N2O IN A DISPENSER vs HAND-WHIPPED CREAM?
When using nitrous oxide chargers, whipped cream is produced at four times the volume of the liquid cream as opposed to twice the volume when hand whipping. The gas dissolves quickly into the fat compounds in the cream until it leaves the canister, where interaction creates the foam. Therefore, using chargers is a much faster alternative to hand whipping cream. The volume can vary based on the fat content and pressure used with the cream. Nitrous oxide chargers produce whipped cream with a lighter consistency and taste. Unlike hand-whipped cream, nitrous oxide chargers keep the cream in a contained space within the dispenser. Therefore, the growth of bacteria is decelerated as oxygen is not able to interact with the cream prior to dispensing the liquid.
